  • 4 oz cream cheese at room temperature
  • 1 c granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 3/4 c all-purpose flour
  • 1/2 tsp salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a baking sheet by covering it with parchment paper.
  3. Using a mixer combine the butter and cream cheese in a bowl until they become smooth and well blended.
  4. Add the sugar to the mixture. Beat it for 1 minute.
  5. Incorporate the egg and vanilla extract, into the mixture until they are fully combined.
  6. Gradually add in the baking powder, flour and salt while continuously mixing until a dough is formed.
  7. Cover the dough. Let it chill in the refrigerator for 1 hour.
  8. Once chilled shape the dough into balls measuring around 1 to 2 inches using floured hands.
  9. Place these balls on the sheet ensuring they are 2 inches apart from each other. Gently press down on each ball to slightly flatten them.
  10. Bake for 9 to 11 minutes. Until you notice that the bottoms of cookies have turned lightly golden in color.
  11. Take it out of the oven. Transfer the cookies onto a wire rack to allow them to cool down completely.
  12. Once cooled, sprinkle sugar over the cookies before serving.

Notes

If you're inviting gluten-free magic into your kitchen with these Cream Cheese Cookies, have no fear; the transition is seamless. Swap out the all-purpose flour for your favorite gluten-free flour blend — one that's designed for a 1:1 substitution to keep things simple. I recommend a blend that includes xanthan gum, which mimics gluten's binding properties, to ensure your cookies hold together in joyful unity. As you mix, the batter may feel a little different; it's the charming quirk of gluten-free baking. Expect a slightly more delicate dough, but rest assured, the cookies will be just as inviting, with a tender crumb that'll have everyone reaching for 'just one more'.
