  • 3 tablespoons olive oil
  • 1 large yellow onion finely chopped
  • 1 cup shredded carrots
  • 2 stalks celery finely diced
  • 4 cloves garlic minced

  • ½ teaspoon freshly ground black pepper
  • 4 cups low-sodium chicken broth 32 ounces
  • 2 cups cooked shredded chicken
  • 1 tablespoon fresh thyme leaves
  • 1 pound refrigerated potato gnocchi avoid frozen for best results
  • 1 5-ounce bag baby spinach
  • cups half-and-half

Sauté the Aromatics

  1. In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium heat until shimmering. Add the chopped onion, shredded carrots, diced celery, and minced garlic. Season with kosher salt and freshly ground black pepper. Sauté the vegetables for approximately 5 minutes, or until softened and aromatic.

Add Broth and Chicken
