Ingredients

  • 2 15.25-ounce cans whole kernel corn, drained and rinsed
  • ½ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • Juice of ½ medium lime approximately 1 tablespoon
  • 1 tablespoon chopped chipotle chile in adobo sauce
  • 1 teaspoon salt or to taste

Prepare the Corn:

  1. Drain both cans of corn thoroughly and rinse under cold water. Allow the corn to drain completely to avoid excess moisture in the salsa.

Chop the Aromatics:

  1. Finely dice the red onion and chop the fresh cilantro. For best results, ensure uniform chopping for even flavor distribution.

Combine the Ingredients:

  1. In a medium-sized mixing bowl, combine the drained corn, red onion, chopped cilantro, lime juice, chopped chipotle chile in adobo, and salt.

Mix and Taste:

  1. Gently stir all ingredients together until evenly mixed. Taste and adjust the seasoning, adding more lime juice or salt if preferred.

Serve or Refrigerate:

  1. This salsa can be served immediately, but for enhanced flavor, allow it to chill in the refrigerator for at least 30 minutes before serving.
