Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup chicken broth
  • 2 garlic cloves freshly minced
  • 1 small onion cut into wedges (use 2 wedges)
  • 4 cups herb-flavored stuffing mix
  • 4 tablespoons butter
  • 1 can cream of chicken soup
  • 1 pint sour cream
  • 8 ounces broccoli florets frozen but thawed

Instructions
 

  1. In a large pan you will need to combine some chicken broth, minced garlic and chopped onion. Bring the mixture to a boil.
  2. Next, add the chicken breasts into the pan. Reduce the heat to medium-low cover it up and let it simmer for 20 minutes until the chicken becomes tender.
  3. Once cooked take out the chicken from the broth. Shred it into pieces. Keep this aside for now while preserving the broth, for later use.
  4. Now it's time to prepare the stuffing. Take some butter. Mix it with herb-flavored stuffing in a bowl. Set this mixture aside.
  5. In another bowl blend together cream and some of that reserved chicken broth using a hand mixer. Then add cream of chicken soup. Mix everything together.
  6. To assemble our casserole dish spread out a layer of stuffing mix at its base. Place shredded chicken on top of that layer followed by broccoli florets.
  7. Pour over these layers our creamy soup mixture we prepared earlier. Finally, sprinkle a bit more of that stuffing mix on top for added flavor and texture.
  8. Place your casserole dish, in an oven that has been preheated to 350°F (175°C). Let it bake for around 30 minutes or until you see it turning bubbly and golden on top.
  9. Once ready serve this delicious Company Chicken Casserole dish. Savor its comforting flavors!
