For the Squash:

  • 6 tbsp unsalted butter
  • 2 1/2 to 3 pounds acorn squash halved and seeded
  • 1/4 c packed light brown sugar
  • 1/4 c maple syrup
  • 1/2 tsp ground cinnamon
  • 1/2 tsp fine salt
  • 1/4 tsp ground nutmeg

For the Crumble Topping:

  • 1 c all-purpose flour
  • 1 c packed light brown sugar
  • 1/4 tsp fine salt
  • 10 tbsp unsalted butter cold and cut into cubes
  • 3/4 c roughly chopped walnuts

To Make the Squash:

  1. Start by preheating your oven to 350°F. Grab an 8x8-inch baking dish and give it a good coating with baking spray—this will save you some cleanup later!
  2. Next, melt the butter in a small saucepan over medium-low heat. As it melts, you’ll notice it starting to foam and sizzle around the edges. Keep stirring every now and then, and after about 2-3 minutes, you’ll see it turn a beautiful golden brown. Once it reaches that perfect color, pour it into a heat-safe bowl and set it aside for now.
  3. Now, grab a microwave-safe dish and pop your acorn squash in. Microwave it for 8-12 minutes, depending on your microwave's power, until it’s soft and cooked through. Carefully remove the skin—this can be a little tricky if it's hot, so be careful! Cut the squash into smaller pieces and toss them into a bowl.
