Ingredients

Bread:

  • 3-4 medium or large bananas
  • 2 tablespoon brown sugar
  • 1 1/2 teaspoon vanilla extract
  • 3/4 teaspoon ground cinnamon
  • 1/2 c butter softened
  • 1 c sugar
  • 2 eggs
  • 2 c all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoon sour cream or Greek yogurt

Crumb Topping:

  • 1 teaspoon cinnamon
  • 1 c flour
  • 1 c brown sugar
  • 6 tablespoon butter cold

Instructions
 

  1. Preheat your oven to 350°F (175°C). Grease two 8x4 inch loaf pans.
  2. In a small bowl, mash the bananas with brown sugar, vanilla extract, and ground cinnamon. Until well combined.
  3. In a large bowl, cream together the softened butter and sugar. Until the mixture is light and fluffy.
  4. Beat in the eggs one at a time. Ensuring each is well incorporated before adding the next.
  5. Sift the flour, baking soda, and salt into the wet ingredients. Stirring gently until just combined.
  6. Add the sour cream (or Greek yogurt). And mix until smooth.
  7. Fold in the mashed banana mixture until evenly distributed.
  8. Pour the batter into the prepared loaf pans, smoothing the tops.
  9. For the crumb topping. Mix the cinnamon, flour, and brown sugar in a bowl. Cut in the cold butter using a pastry cutter. Until the mixture resembles coarse crumbs. Evenly sprinkle the topping. Over the batter in both pans.
  10. Bake in the preheated oven for 35-40 minutes. Or until a cake tester or toothpick inserted into the center comes out clean with just a few moist crumbs.
  11. Let the loaves cool in the pans for about 10 minutes. Before transferring them to a wire cooling rack.
