  • ¼ c all-purpose flour for coating
  • ½ tsp salt
  • ¼ tsp ground black pepper

  • 4 medium skinless boneless chicken breast halves - pounded 1/4 inch thick
  • 4 tbsp butter
  • 4 tbsp olive oil
  • 1 c sliced mushrooms
  • ½ c Marsala wine
  • ¼ c cooking sherry

Instructions
 

  1. Prep the Chicken: In a shallow dish, mix ¼ cup flour, ½ teaspoon salt, ¼ teaspoon black pepper, and ½ teaspoon dried oregano. Coat the chicken breasts evenly. In the flour mixture.
  2. Cook the Chicken: Heat 4 tablespoons of butter and 4 tablespoons of olive oil. In a large skillet over medium heat. Add the chicken. Cook until lightly browned on each side. About 5 minutes per side.
  3. Add Mushrooms and Wine: Add 1 cup of sliced mushrooms around the chicken in the skillet. Pour ½ cup Marsala wine and ¼ cup cooking sherry. Over the chicken and mushrooms.
  4. Simmer: Reduce heat to low. Cover the skillet. Let the chicken simmer for about 10 minutes. Turning once. Until the chicken is cooked through. And the sauce has thickened.
