  • ¼ tsp salt
  • 3 ripe bananas chopped
  • Vegetable oil for frying

Glaze:

  • 2 c powdered sugar
  • c milk
  • ½ tsp vanilla extract
  • tsp ground cinnamon

Instructions
 

  1. Mix Wet Ingredients: In a medium bowl. Whisk together the eggs, milk, melted butter, and vanilla extract. Set aside.
  2. Combine Dry Ingredients: In a large bowl. Mix the flour, brown sugar, baking powder, cinnamon, and salt.
  3. Combine Wet and Dry: Pour the wet mixture. Into the dry ingredients. Stir until just combined. Fold in the chopped bananas.
  4. Heat Oil: Heat 2 inches of vegetable oil in a large pot. Over medium-high heat. Until it reaches 350°F.
  5. Fry Fritters: Scoop small portions of batter (about a tablespoon each) into the hot oil. Fry for 4-5 minutes, flipping often. Until golden brown.
  6. Drain: Remove fritters. Place them on a paper towel-lined tray to drain. Repeat with the remaining batter.
  7. Make Glaze: In a bowl, whisk together powdered sugar, milk, vanilla extract, and cinnamon.
  8. Glaze Fritters: Dip cooled fritters in the glaze. And place them on a wire rack. To let the excess glaze drip off.
