Ingredients

  • 2 c salted butter
  • 2 c sugar
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 2 c milk chocolate chips
  • ½ c chopped pecans

Instructions

  1. Start, by lining a 7×12 inch jelly roll pan with parchment paper.
  2. In a saucepan mix together 2 cups of butter, 2 cups of sugar, 2 teaspoons of vanilla extract and ¼ teaspoon of salt.
  3. Place the saucepan over medium heat and cook the mixture stirring occasionally until it melts and becomes smooth.
  4. Increase the heat to bring the mixture to a boil and continue stirring and cooking until it reaches a temperature of 290°F (hard crack stage). The mixture should develop an amber caramel color.
  5. Once it reaches the hard crack stage immediately pour the toffee into the pan.
  6. Wait for 1–2 minutes then evenly sprinkle 2 cups of milk chocolate chips, over the toffee. Afterward soon as they start melting spread them smoothly over the toffee. Finally sprinkle ½ cup of chopped pecans on top.
  7. Let the toffee sit at room temperature for 2 hours so that it can harden properly.
  8. Once hardened cut your toffee into pieces and serve them with delight!

Notes

Great news, for all the lovers out who follow a gluten-free diet! Our delightful Christmas Toffee is gluten-free by nature. The main ingredients such as butter, sugar, vanilla extract, salt, chocolate chips and pecans are usually free from gluten. However it's always a move, to double-check the labels of your ingredients to make sure they are certified as gluten-free. Particularly pay attention to the chocolate chips since certain brands might have the possibility of cross contamination.
