Ingredients

  • c 113 grams bittersweet or semisweet chocolate, coarsely chopped, plus more for topping

  • c 35 grams unsweetened cocoa powder (Dutch-process)
  • tsp salt
  • 2 large eggs
  • ¾ c 150 grams granulated sugar

Instructions
 

  1. Preheat your oven to 350°F (180°C). Prepare your muffin pan by placing muffin liners in it.
  2. Combine the chocolate and butter in a bowl. Melt them together using short bursts in the microwave. Or by placing the bowl over simmering water until smooth. Allow the mixture to cool slightly.
  3. In a bowl. Whisk together the flour, cocoa powder, and salt.
  4. Beat the eggs and sugar with a mixer. Until thick and light in color. Then gently mix in the melted chocolate and butter.
  5. Stop the mixer. Fold in the dry ingredients with a rubber spatula. Until just combined. Avoid overmixing.
