Ingredients

  • 1 cup mayonnaise
  • 1 tablespoon fresh lime juice
  • 2 to 4 chipotle peppers in adobo sauce finely minced
  • 2 cloves garlic finely minced
  • ¼ teaspoon salt

Instructions
 

Combine the base ingredients.

  1. In a medium-sized mixing bowl, add the mayonnaise, fresh lime juice, minced chipotle peppers, minced garlic, and salt. Stir thoroughly until the mixture is smooth and well incorporated.

Optional: Blend for smoother texture.

  1. For a silkier consistency, transfer the mixture to a small food processor and pulse until completely smooth. This step is optional but recommended for a more refined finish.

Adjust seasoning.

  1. Taste the aioli and adjust according to preference. Add more chipotle peppers for increased heat or a pinch of additional salt to enhance the overall flavor.

Chill to develop flavor.

  1. Cover the aioli and refrigerate for at least 30 minutes. This allows the flavors to meld, resulting in a deeper, more cohesive taste.

Serve.

  1. Prior to serving, stir the aioli briefly. Enjoy as a spread, dip, or sauce to complement a variety of dishes.
