This flavorful Chicken Taco Lasagna combines shredded rotisserie chicken, taco seasoning, cheese, salsa, and sour cream layered between no-boil lasagna noodles for a hearty and satisfying meal.

Ingredients

  • 2 rotisserie chickens shredded (approximately 4 cups of meat)
  • Juice of 2 large limes
  • 2 packets taco seasoning
  • 1 cup shredded Mexican cheese blend divided
  • 1 cup sour cream
  • 1 cup salsa mild or medium, as preferred
  • Salt and freshly cracked black pepper to taste
  • 1 package 8 oz no-boil lasagna noodles

Optional Toppings:

  • Fresh cilantro chopped
  • Pico de gallo
  • Fresh jalapeño slices

Instructions
 

Preheat the Oven

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with nonstick spray or a small amount of oil.

Prepare the Chicken Mixture

  1. In a large mixing bowl, combine the shredded rotisserie chicken, lime juice, taco seasoning, ¾ cup of the shredded Mexican cheese blend, sour cream, and salsa. Mix until the ingredients are evenly incorporated. Season to taste with salt and pepper, if needed.

Assemble the Lasagna

  1. Spoon approximately ½ cup of the chicken mixture into the prepared baking dish and spread it evenly across the bottom.
  2. Arrange a single layer of no-boil lasagna noodles over the chicken mixture.
  3. Spread another layer of the chicken mixture on top of the noodles.
  4. Add a second layer of noodles and top the dish with the remaining chicken mixture.
  5. Sprinkle the remaining ¼ cup of shredded cheese evenly across the top.

Bake

  1. Transfer the baking dish to the preheated oven and bake uncovered for approximately 30 minutes, or until the cheese is fully melted and the dish is heated through.

Rest and Garnish

  1. Remove the lasagna from the oven and allow it to cool for 10 minutes to set before serving.
  2. Garnish with fresh cilantro, pico de gallo, and jalapeño slices, if desired.

Notes

To make this dish gluten-free, substitute traditional no-boil lasagna noodles with a certified gluten-free variety. Ensure that both the taco seasoning and salsa used are labeled gluten-free, as some packaged products may contain wheat-based thickeners or flavoring agents. The remaining ingredients are naturally gluten-free.
