Ingredients

  • 12 medium-sized jalapeños halved and seeded
  • 1 cup shredded cooked chicken
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese or preferred variety
  • 2 teaspoons salsa
  • 1 ½ teaspoons ground cumin
  • 1 ¼ teaspoons chili powder optional
  • ¼ teaspoon salt

Instructions

Preheat the Oven

  1. Set the oven to 400°F (200°C) and line a baking sheet with aluminum foil for easy cleanup.

Prepare the Jalapeños

  1. Slice each jalapeño lengthwise and remove seeds and membranes. For a milder flavor, ensure all seeds are discarded.

Make the Filling

  1. In a medium mixing bowl, combine cream cheese, shredded cheddar, salsa, cumin, chili powder (if using), and salt until smooth. Gently fold in the shredded chicken until evenly distributed.

Fill the Jalapeños

  1. Spoon approximately 1 teaspoon of the mixture into each jalapeño half, smoothing the surface for even baking.

Bake

  1. Arrange the stuffed jalapeños on the prepared baking sheet and bake for 20 minutes, or until the cheese is melted and the peppers are tender.

Serve

  1. Allow to cool slightly before serving to prevent burns. Serve warm for best flavor and texture.
