Chicken Potatoes Bake features tender chicken thighs and golden, garlicky potatoes topped with melted mozzarella. A simple and comforting dinner perfect for family meals.

Ingredients

  • 4 medium potatoes approximately ¾-inch/2 cm cubes; russet, white, or red varieties; peeling optional
  • 1 tablespoon minced garlic
  • tablespoons olive oil
  • teaspoon salt
  • teaspoon pepper
  • pounds boneless skinless chicken breasts or thighs (thighs recommended for juiciness)
  • ¾ cup shredded mozzarella cheese
  • Fresh parsley optional, for garnish

Preheat the Oven:

  1. Begin by preheating your oven to 425°F (220°C). This temperature ensures the potatoes will crisp and the chicken will cook thoroughly.

Prepare the Potatoes:

  1. Place the potato cubes in a large mixing bowl. Add the minced garlic, olive oil, salt, and pepper. Toss thoroughly to ensure all pieces are evenly coated with seasoning and oil.

Bake the Potatoes:

  1. Lightly grease a 9x13-inch baking dish with non-stick spray. Spread the seasoned potatoes evenly in the dish. Place the dish in the preheated oven and bake for 15 minutes. This step partially cooks the potatoes, allowing them to brown evenly during the final bake.

Add the Chicken:

  1. Remove the baking dish from the oven. Nestle the chicken pieces into the potato mixture, ensuring they are evenly distributed. For enhanced flavor, brush the chicken lightly with olive oil and sprinkle additional salt and pepper over the top.

Continue Baking:

  1. Return the dish to the oven and bake for an additional 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden brown.

Add the Cheese:

  1. Remove the dish from the oven and sprinkle the shredded mozzarella cheese evenly over the chicken and potatoes. Place the dish back into the oven for 3–5 minutes, or until the cheese melts and becomes bubbly.

Garnish and Serve:

  1. Once baked, sprinkle freshly chopped parsley over the dish for a touch of color and added freshness. Serve immediately while hot.
