Chicken and Dressing Casserole

A comforting Chicken and Dressing Casserole made with tender shredded chicken, seasoned cornbread, aromatic vegetables, and creamy homemade gravy for a classic, hearty dish.

Ingredients

For the Casserole:

  • 4 cups shredded chicken
  • 4 cups cornbread or other cubed dried bread
  • cup chopped celery
  • 1 cup chopped onion
  • 1 can cream of onion soup
  • 1 ½ cups chicken broth reserve 1 cup for gravy
  • 2 tablespoons butter
  • 1 teaspoon poultry seasoning
  • ½ teaspoon dried sage
  • Salt and pepper to taste

For the Gravy:

  • ¼ cup unsalted butter
  • 2 cups chicken broth
  • ¼ cup heavy cream
  • ¼ cup all-purpose flour
  • Salt and pepper to taste

Instructions
 

Preheat the Oven:

  1. Set the oven to 375°F (190°C).

Prepare the Vegetables:

  1. In a skillet over medium-high heat, melt the butter. Add the chopped onion and celery, and sauté until softened and fragrant.

Combine the Casserole Ingredients:

  1. In a large mixing bowl, combine the cornbread, shredded chicken, sautéed vegetables, sage, poultry seasoning, cream of onion soup, and ½ cup of the chicken broth. Mix thoroughly until well combined.

Assemble and Bake:

  1. Lightly grease a 9x13-inch baking dish. Transfer the mixture into the dish, spreading it evenly. Bake for 45 minutes, or until heated through and lightly golden on top.

Prepare the Gravy:

  1. In a skillet over medium heat, melt the butter. Whisk in the flour and cook for 1–2 minutes, until lightly golden. Gradually add the chicken broth, whisking constantly to prevent lumps. Season with salt and pepper to taste. Continue cooking until thickened, then stir in the heavy cream and simmer for an additional 5–10 minutes.

Serve:

  1. Remove the casserole from the oven. Pour the prepared gravy over the top and garnish with parsley or chopped green onions, if desired. Serve warm.

Notes

To make this recipe gluten-free, use certified gluten-free cornbread or bread cubes, a gluten-free cream of onion soup, and substitute the all-purpose flour in the gravy with a gluten-free flour blend or cornstarch slurry. Ensure all other packaged ingredients are labeled gluten-free.
