Ingredients

  • 1/2 c 1 stick butter, softened
  • 1/2 c light brown sugar packed
  • 1/2 c granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 1/4 c all-purpose flour
  • 1/2 tsp salt
  • 2 c coconut flakes sweetened or unsweetened, your call
  • Coarse sugar for topping like turbinado or Demerara

Instructions
 

  1. Preheat your oven to 350°F and get two baking sheets ready by lining them with parchment paper.
  2. In a medium bowl, mix together the softened butter, both sugars, and the egg until it’s nice and smooth. Once that’s all combined, stir in the vanilla and baking soda.
  3. Now, slowly add the flour and salt, mixing it in bit by bit until just combined—don’t overdo it. Stir in about 1 1/2 cups of the coconut flakes until they’re evenly mixed in.
  4. Using a tablespoon, scoop out dough portions (about 2 tablespoons each). Roll each dough ball in the remaining coconut, then place them on your prepared baking sheets, leaving about 2 inches of space between each one.
  5. Bake the cookies for 12-16 minutes, or until they’re just starting to turn golden brown. Sprinkle a little coarse sugar on top, then pop them back in the oven for another 2-3 minutes to set the sugar.
  6. Allow the cookies to cool right on the baking sheet for roughly 3 minutes before transferring them to a wire rack to cool fully. Then, enjoy!

Notes

Making these gluten-free is super easy! Just swap out the all-purpose flour for a good gluten-free baking flour blend. Make sure the one you choose is labeled for baking, and you should get the same chewy, delicious results. Also, double-check that your baking soda and any other ingredients are certified gluten-free, just to be safe. You’ll end up with the same great cookies, without any gluten worries!
