Cheesy Retro Queso Dip

This Cheesy Retro Queso Dip blends Velveeta with RO*TEL tomatoes and green chilies for a smooth, creamy appetizer that’s ready in minutes.

Ingredients

  • 1 10-oz can RO*TEL Original Diced Tomatoes & Green Chilies undrained
  • 1 16-oz block Velveeta cheese cut into 1-inch cubes

Prepare the Ingredients

  1. Cut the Velveeta into 1-inch cubes. Place the cheese cubes and the entire contents of the RO*TEL can (undrained) into a microwave-safe dish with a capacity of approximately 1½ quarts.

Microwave and Stir

  1. Cover the dish. Microwave on high power for 3 minutes. Remove carefully and stir to begin combining the melted cheese with the tomatoes and green chilies.

Heat Again

  1. Return the dish to the microwave. Heat on high power for an additional 2 minutes. Microwave times may vary based on wattage.

Combine and Serve

  1. Stir until the mixture is completely smooth and uniform. Transfer to a serving dish and serve warm with tortilla chips or desired accompaniments.
