This Cheesy One Pot Beef and Potatoes is comfort food at its finest! It’s loaded with hearty, savory ingredients—tender slices of potato, seasoned ground beef, and a mix of colorful veggies, all topped with melty cheddar cheese. The whole dish comes together in one pot, so it’s easy on the clean-up too. It’s perfect for those nights when you want something cozy and satisfying without spending hours in the kitchen. Just a few simple ingredients, a bit of simmering, and you’re set with a meal everyone will love.

Ingredients

  • 2 tablespoons salted butter
  • 2 to 2 1/2 pounds russet potatoes about 5-6 medium potatoes, sliced
  • 1 1/4 pounds lean ground beef
  • 1 red bell pepper chopped (adds a nice pop of color)
  • 1 jalapeño chopped
  • 1 sweet onion chopped
  • 4 ounces mushrooms chopped (I used a gourmet blend)
  • 3 cloves garlic minced
  • 1 tablespoon all-purpose seasoning use your favorite—I went with DUST by VooDoo Chef
  • 1 teaspoon salt
  • 2 tablespoons tomato paste
  • 2 c whole milk
  • 1 c shredded cheddar cheese
  • Chopped parsley for garnish if you like

Instructions
 

  1. Slice the potatoes in half lengthwise, then cut them into 1/4-inch thick rounds.
  2. In a Dutch oven or large non-stick skillet, melt the butter over medium-high heat. Add the potato slices and cook for around 8 minutes, stirring often, until they start to soften up. Once they’re just beginning to get tender, take them out and set them aside.
  3. In the same pot, add the chopped peppers and onions, cooking for about 3 minutes until they begin to soften.
  4. Add the ground beef and cook until it’s just starting to brown.
  5. Stir in the garlic, mushrooms, seasoning blend, and tomato paste, mixing everything well.
  6. Return the potatoes to the pot, stirring gently to combine with the other ingredients.
  7. Pour in the milk, cover with a lid, and let it cook on medium heat for 15-20 minutes, or until the potatoes are fully tender. If it looks like there’s a bit too much liquid, take the lid off for the last 5 minutes so it can reduce a bit.
  8. When everything’s ready, sprinkle the cheddar on top and pop it under the broiler for a minute or two until the cheese is melted and bubbly.
  9. Finish with a sprinkle of parsley if you’d like.
  10. Serve it up with a big glass of milk and a simple side salad. Enjoy!

Notes

This recipe can easily be made gluten-free! Just make sure to check your all-purpose seasoning blend and tomato paste to confirm they’re gluten-free, as some brands may have hidden gluten. You’re all set after that since the main ingredients—potatoes, ground beef, cheese, and milk—are naturally gluten-free. Serve it up with a side salad or gluten-free bread, and you’ve got a meal that’s perfect for anyone avoiding gluten!
