Ingredients

  • 6 jalapeños halved lengthwise
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • ½ c mascarpone cheese
  • 8 slices of bread
  • 1 c shredded cheddar cheese
  • 2 tbsp salted butter

Instructions
 

  1. Preheat your oven to 425°F. And line a baking sheet. With parchment paper.
  2. Toss the halved jalapeños. In 1 tablespoon of olive oil. Season with salt. And pepper. And place them skin-side up. On the baking sheet. Roast for 10-15 minutes. Or until the skins are blistered. Once done. Place the roasted jalapeños. In a plastic bag. For about 5 minutes. To help loosen the skin. Peel off the skins. Remove most of the seeds and ribs. Then slice the jalapeños. Set aside.
  3. Spread mascarpone cheese. Evenly on 4 slices of bread. And top the remaining 4 slices. With shredded cheddar cheese. Divide the roasted jalapeños. Among the sandwiches. Then close them. Making sure to butter. Both sides of the bread.
  4. Heat half of the remaining olive oil. On a flat griddle. Over medium heat. Grill the sandwiches. Until golden on one side. Then flip them over. Add the rest of the oil. To the griddle. And cook the other side. Until golden. And the cheese is melted. And gooey.
