Ingredients

  • 5 cups cauliflower florets approximately 1 medium head
  • 2 tablespoons unsalted butter
  • 3 cloves garlic minced
  • 2 cups half-and-half
  • 2 tablespoons cornstarch
  • ½ teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ½ cup finely grated Parmesan cheese
  • ¾ cup shredded low-moisture mozzarella cheese
  • 2 teaspoons chopped fresh parsley for garnish

Instructions
 

Preheat the Oven and Prepare Baking Dish:

  1. Preheat the oven to 375°F (190°C). Lightly grease a 2-quart casserole dish with butter or nonstick cooking spray.

Cook the Cauliflower:

  1. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for approximately 6–8 minutes, or until fork-tender. Drain thoroughly and transfer the cooked florets to the prepared baking dish.

Prepare the Alfredo Sauce:

  1. In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1–2 minutes, stirring frequently to prevent browning.
  2. In a separate bowl, whisk together the half-and-half, cornstarch, Italian seasoning, salt, and black pepper until smooth. Gradually pour this mixture into the saucepan, stirring continuously. Cook for 3–4 minutes or until the sauce thickens to a custard-like consistency.

Assemble the Dish:

  1. Remove the sauce from heat and stir in the Parmesan cheese until completely incorporated. Pour the Alfredo sauce evenly over the cauliflower in the baking dish. Sprinkle the shredded mozzarella over the top.

Bake:

  1. Place the casserole dish in the oven and bake uncovered for 15–20 minutes, or until the sauce is bubbling and the cheese is melted and lightly golden.

Garnish and Serve:

  1. Remove from the oven and allow the dish to rest for 2–3 minutes. Garnish with chopped fresh parsley before serving.

Notes

To ensure this dish is entirely gluten-free, confirm that the cornstarch, half-and-half, and all cheeses are labeled gluten-free, as some brands may contain additives or cross-contamination. Additionally, use caution with any pre-shredded cheeses, as anti-caking agents can sometimes contain gluten.
