10-ouncecan Rotel diced tomatoes with chilis, undrained
2cupsshredded cheddar cheese
8ouncescream cheesesoftened and cubed

Instructions
Prepare the beef
In a skillet set over medium heat, cook the ground beef until it is no longer pink. Drain thoroughly to remove excess fat.
Combine ingredients
Reduce the heat to low and add the cheddar cheese, cream cheese, Rotel tomatoes (including liquid), and most of the crumbled bacon. Stir frequently until the mixture is fully melted and smooth.
Transfer to crock pot
Pour the mixture into a 2-quart crock pot. Set to low heat and cook for 2 to 3 hours, stirring occasionally, until the dip is warmed through and creamy.
Finish and garnish
Just before serving, stir in the parsley and top with the reserved crumbled bacon. Serve warm with chips, pretzels, or fresh vegetables.
