Cheeseburger with Bacon Dip in Crock Pot

A rich and creamy cheeseburger with bacon dip made in the crock pot, prepared with ground beef, cheddar cheese, cream cheese, Rotel tomatoes, and smoky bacon.

Ingredients

  • 1 pound ground beef or protein of choice
  • 10- ounce can Rotel diced tomatoes with chilis, undrained
  • 2 cups shredded cheddar cheese
  • 8 ounces cream cheese softened and cubed
  • 6 ounces cooked bacon crumbled (reserve a small portion for garnish)
  • 1 teaspoon parsley

Instructions
 

Prepare the beef

  1. In a skillet set over medium heat, cook the ground beef until it is no longer pink. Drain thoroughly to remove excess fat.

Combine ingredients

  1. Reduce the heat to low and add the cheddar cheese, cream cheese, Rotel tomatoes (including liquid), and most of the crumbled bacon. Stir frequently until the mixture is fully melted and smooth.

Transfer to crock pot

  1. Pour the mixture into a 2-quart crock pot. Set to low heat and cook for 2 to 3 hours, stirring occasionally, until the dip is warmed through and creamy.

Finish and garnish

  1. Just before serving, stir in the parsley and top with the reserved crumbled bacon. Serve warm with chips, pretzels, or fresh vegetables.

Notes

To make this dish gluten-free, ensure that the Rotel tomatoes, cheese, and bacon are labeled gluten-free. Serve with certified gluten-free chips, crackers, or vegetables for dipping.
