Cheeseburger Quesadillas

Cheeseburger Quesadillas combine seasoned ground beef, shredded cheddar cheese, onions, pickles, and a tangy burger sauce between crisp tortillas for a quick and satisfying meal.

Ingredients

For the Special Sauce:

  • ¼ cup mayonnaise
  • ¼ cup ketchup
  • 2 tablespoons dill pickles finely minced
  • 1 tablespoon white onion finely diced
  • 2 teaspoons pickle juice

For the Quesadillas:

  • 1 pound lean ground beef
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 4 burrito-size flour tortillas
  • 3 to 4 cups shredded cheddar cheese
  • ½ cup white onion diced
  • ½ cup dill pickles thinly sliced
  • Nonstick cooking spray or butter for the skillet

Instructions
 

Prepare the Special Sauce:

  1. In a small mixing bowl, combine mayonnaise, ketchup, minced dill pickles, diced onion, and pickle juice. Stir until well blended. Cover and refrigerate until ready to serve.

Cook the Ground Beef:

  1. In a large skillet over medium-high heat, brown the ground beef, breaking it into crumbles as it cooks. Once fully browned, drain any excess grease. Return the skillet to the heat and season the meat with Worcestershire sauce, salt, black pepper, garlic powder, and onion powder. Stir thoroughly to combine. Remove from heat and set aside.

Assemble the Quesadillas:

  1. Preheat a griddle or large skillet over medium heat. Lightly coat with cooking spray or butter. Place one flour tortilla on the hot surface. Sprinkle a generous layer of shredded cheddar cheese over one half (or across the entire tortilla if using two to sandwich). Add a portion of the seasoned beef, followed by diced onion and sliced pickles. Top with an additional layer of cheese and cover with a second tortilla or fold the tortilla in half.

Cook the Quesadillas:

  1. Cook each quesadilla for 2 to 3 minutes per side, or until the tortilla is golden brown and crispy, and the cheese is fully melted. Flip carefully using a spatula.

Slice and Serve:

  1. Transfer the quesadilla to a cutting board and allow it to rest for 3 to 5 minutes before slicing into wedges. Serve warm, accompanied by the prepared special sauce for dipping.

Notes

To make this recipe gluten-free, simply substitute the flour tortillas with certified gluten-free tortillas. Also ensure that the Worcestershire sauce and all seasonings (especially spice blends and condiments like mayonnaise, ketchup, and pickle relish) are labeled gluten-free.
