Ingredients

  • 2 cups 240 g All-Purpose Flour
  • 1 cup 120 g Whole Wheat Flour
  • 1 tsp Instant Yeast
  • ½ tsp Salt
  • cups 180 g Grated Cheddar Cheese (divided)
  • cups 300 ml Unsweetened Almond Milk
  • ½ tbsp Honey
  • 2 tbsp Olive Oil
  • 1 large egg whisked (for brushing)

Instructions
 

Combine Dry Ingredients:

  1. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, instant yeast, salt, and 1 cup of grated cheddar cheese. Reserve the remaining cheese for topping.

Prepare Wet Ingredients:

  1. In a small bowl, gently warm the almond milk and honey until lukewarm. Stir in the olive oil, ensuring the honey dissolves completely.

Mix and Knead Dough:

  1. Pour the wet ingredients into the dry mixture. Stir until a shaggy dough forms. Transfer the dough to a lightly floured surface and knead for 2–3 minutes until smooth and elastic.

First Rise:

  1. Place the dough in a lightly greased bowl. Cover with a clean kitchen towel and let it rise in a warm, draft-free area for 1 hour or until doubled in size.

Shape the Buns:

  1. Turn the dough out onto a floured surface and divide it into 8 equal portions. Shape each portion into a ball and arrange them on a parchment-lined baking sheet, spacing them evenly.

Second Rise:

  1. Cover the buns with the kitchen towel and allow them to rise again for 30 minutes, ensuring they become light and airy.

Preheat the Oven:

  1. Preheat your oven to 338°F (170°C) while the buns complete their second rise.

Prepare for Baking:

  1. Brush the tops of the buns with the whisked egg for a glossy finish. Sprinkle the reserved cheddar cheese evenly over each bun.

Bake:

  1. Bake the buns in the preheated oven for 20–25 minutes or until they are golden brown and cooked through.

Cool and Serve:

  1. Remove the buns from the oven and allow them to cool on a wire rack for at least 5 minutes before serving.

Notes

To make these cheese buns gluten-free, substitute the all-purpose and whole wheat flours with a gluten-free flour blend that includes xanthan gum. Ensure the yeast and any additional ingredients are certified gluten-free.
