8 Servings

Ingredients

  • 2 tablespoons unsalted butter
  • 1 bell pepper yellow, red, or orange, finely diced
  • 1 small onion finely diced
  • 2 stalks celery finely diced
  • 8 ounces cream cheese cubed
  • 3/4 cup mayonnaise
  • 2 cups cheddar cheese shredded and divided
  • 6 ounces parmesan cheese grated
  • 2 tablespoons Creole seasoning
  • 1 tablespoon hot sauce
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 pound shrimp deveined, cooked, tails removed, and roughly chopped
  • Parsley roughly chopped, for garnish
  • Crackers chips, or bread, for serving

Instructions

Preheat the oven:

  1. Preheat to 375°F (190°C). Lightly grease a 9x9-inch casserole dish with baking spray and set aside.

Sauté the vegetables:

  1. In a medium saucepan, melt the butter over medium heat. Add the diced bell pepper, onion, and celery. Cook for 4–5 minutes, or until softened and lightly golden.

Prepare the cheese mixture:

  1. Remove the saucepan from the heat. Add the cubed cream cheese, mayonnaise, half of the shredded cheddar cheese, and all of the parmesan cheese. Stir with a spatula until the cream cheese has softened and the mixture is blended.

Season and add shrimp:

  1. Incorporate the Creole seasoning, hot sauce, black pepper, and garlic powder. Fold in the chopped shrimp gently until evenly distributed.

Assemble the dip:

  1. Transfer the mixture into the prepared casserole dish. Sprinkle the top with the remaining shredded cheddar cheese.

Bake:

  1. Place in the oven and bake for 30 minutes, or until bubbling around the edges and golden on top.

Serve:

  1. Garnish with chopped parsley and serve warm with crackers, bread, or chips.
