Instructions
Preheat the oven:
Preheat to 375°F (190°C). Lightly grease a 9x9-inch casserole dish with baking spray and set aside.
Sauté the vegetables:
In a medium saucepan, melt the butter over medium heat. Add the diced bell pepper, onion, and celery. Cook for 4–5 minutes, or until softened and lightly golden.
Prepare the cheese mixture:
Remove the saucepan from the heat. Add the cubed cream cheese, mayonnaise, half of the shredded cheddar cheese, and all of the parmesan cheese. Stir with a spatula until the cream cheese has softened and the mixture is blended.
Season and add shrimp:
Incorporate the Creole seasoning, hot sauce, black pepper, and garlic powder. Fold in the chopped shrimp gently until evenly distributed.
Assemble the dip:
Transfer the mixture into the prepared casserole dish. Sprinkle the top with the remaining shredded cheddar cheese.
Bake:
Place in the oven and bake for 30 minutes, or until bubbling around the edges and golden on top.
Serve:
Garnish with chopped parsley and serve warm with crackers, bread, or chips.
