Ingredients

  • 1 c Butter unsalted and melted (cooled to warm)
  • 1/2 c Granulated sugar
  • 1 c Brown sugar
  • 2 Large eggs
  • 1.5 teaspoon Vanilla extract
  • 2.5 c All-purpose flour
  • 1 teaspoon Cinnamon powder
  • 1 teaspoon Cornstarch
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 1.5 c Pecans unsalted, roughly chopped (toasted preferred)
  • 1/2 c Toffee bits optional

Instructions
 

  1. First start by creaming the butter and sugars. In a bowl combine the butter, granulated sugar and brown sugar until they become light and fluffy.
  2. Next add the eggs and vanilla extract to the mixture. Stir everything together until it becomes smooth and well-blended.
  3. Now it's time to combine the ingredients. Gently fold in the all-purpose flour, cinnamon powder, cornstarch, baking soda and baking powder until they are just combined.
  4. Once that's done you can add some pecans and optional toffee bits to the dough. Mix them in evenly for that flavor.
  5. Before shaping the cookies it's best to chill the dough, for 30 to 45 minutes, in the refrigerator. This will make it easier to handle.
  6. After chilling scoop portions of dough. Roll them into balls. Place these on a cookie tray lined with parchment paper.
  7. Preheat your oven to 350 degrees F. Then bake these cookies for approximately 11 to 14 minutes or until they turn golden brown with firm edges.
  8. Finally allow your Butter Pecan Cookies some time to cool before indulging in their scrumptiousness! Enjoy!
