Buffalo Chicken Bites are crispy, spicy, and irresistibly flavorful. Made with chicken, cayenne, flour, hot sauce, and butter, these bites are perfect for parties, appetizers, or game-day snacking.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 large eggs beaten
  • 1 cup vegetable oil
  • 1 pound skinless boneless chicken breast halves, cut into 1-inch pieces
  • ¼ cup hot sauce
  • 1 tablespoon chopped garlic
  • 1 teaspoon butter

Instructions
 

Prepare the Breading Station:

  1. In a medium bowl, whisk together the flour, cayenne pepper, salt, and ground black pepper. In a separate bowl, beat the eggs until smooth.

Coat the Chicken:

  1. Dip each chicken piece into the beaten eggs, ensuring it is fully coated. Transfer the chicken to the flour mixture and thoroughly coat each piece.

Heat the Oil:

  1. In a large saucepan, heat the vegetable oil over medium heat until shimmering but not smoking.

Fry the Chicken:

  1. Working in batches, fry the coated chicken pieces in the hot oil for approximately 3 minutes per side, or until the chicken is golden brown and no longer pink in the center. Remove the chicken and drain on a plate lined with paper towels.

Prepare the Buffalo Sauce:

  1. In a microwave-safe bowl, combine the hot sauce, chopped garlic, and butter. Microwave for approximately 1 minute, or until the butter is melted and the sauce is warmed through. Stir to combine.

Serve:

  1. Toss the fried chicken bites in the prepared Buffalo sauce or serve the sauce on the side as a dipping option. Serve immediately for the best texture and flavor.

To prepare this recipe gluten-free, substitute the all-purpose flour with a gluten-free all-purpose flour blend. Ensure the hot sauce and all other ingredients used are certified gluten-free.
