This Brunswick Stew is a hearty blend of chicken, salt pork, potatoes, lima beans, and corn simmered in a rich, flavorful broth. Perfect for gatherings or a cozy family dinner!

Ingredients

For the Broth:

  • 4 oz salt pork diced
  • 2 lbs chicken parts
  • 8 cups water

For the Vegetables and Seasoning:

  • 3 potatoes cubed
  • 3 onions chopped
  • 1 28 oz can whole peeled tomatoes, chopped
  • 2 cups canned whole kernel corn
  • 1 10 oz package frozen lima beans
  • 1 tbsp Worcestershire sauce
  • ½ tsp salt
  • ¼ tsp ground black pepper

Instructions
 

Prepare the Broth

  1. In a large stockpot, combine the diced salt pork, chicken parts, and water. Bring to a boil over high heat, then reduce the heat to low. Cover the pot and simmer for approximately 45 minutes, or until the chicken becomes tender.

Process the Chicken

  1. Remove the chicken from the pot and set aside to cool until it is easy to handle. Carefully remove the skin and bones, then chop the meat into bite-sized pieces. Return the chopped chicken to the pot.

Add Vegetables and Seasoning

  1. Add the cubed potatoes, chopped onions, canned tomatoes (including their juices), corn, and lima beans to the pot. Stir in the Worcestershire sauce, salt, and black pepper. Ensure all ingredients are well combined.

Simmer the Stew

  1. Simmer the stew uncovered over low heat for approximately 1 hour. Stir occasionally to prevent sticking and ensure even cooking. The potatoes should become tender, and the broth will thicken slightly as it cooks.

Serve

  1. Ladle the stew into serving bowls and serve hot. Garnish with fresh herbs if desired and pair with your favorite side dishes such as cornbread or biscuits.
