Ingredients

  • 1 9 oz package brownie mix
  • 1 egg
  • 1 tbsp cold water
  • 1 14 oz package individually wrapped caramels, unwrapped
  • 1 5 oz can evaporated milk
  • 2 8 oz packages cream cheese, softened
  • ½ c white sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 c chocolate fudge topping

Instructions
 

  1. Prep the Pan: Heat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. Make Brownie Base: In a small bowl, combine the brownie mix, one egg, and a tablespoon of cold water. Mix until smooth, then spread evenly in the prepared pan. Bake for 25 minutes.
  3. Prepare Caramel Layer: While the brownie bakes, place caramels and evaporated milk in a saucepan over low heat. Stir until the caramels are melted and the mixture is smooth. Save 1/3 cup of the caramel sauce and pour the rest over the baked brownie base.
  4. Mix Cheesecake Layer: In a large bowl, beat together the cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition. Pour this mixture over the caramel layer.
  5. Bake the Cheesecake: Place the springform pan back in the oven and bake for 40 minutes. Allow the cheesecake to cool to room temperature, then chill it in the fridge.
  6. Add Toppings: Once fully chilled, run a knife around the edge of the pan to loosen the cheesecake, and remove the rim of the pan. Warm the reserved caramel sauce, spoon it over the cheesecake, and drizzle with chocolate fudge topping.
