Ingredients

Cake:

  • 15 oz yellow cake mix e.g., Duncan Hines
  • 3 large eggs or as specified by cake mix
  • 1/3 c vegetable oil as per cake mix instructions
  • 1/2 c peach nectar or juice
  • 1 pound peeled and chopped peaches about 3-4
  • A drop of orange food coloring optional

Brown Sugar Frosting:

  • 1/2 c unsalted butter cut into pieces
  • 1/2 c heavy cream
  • 1 c packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 1/2 c confectioner's sugar sifted

Instructions

  1. Start by preheating your oven to 350°F (175°C).
  2. In a bowl combine the cake mix, eggs, vegetable oil and peach nectar. If you want to use food coloring now is the time to add it. Mix well until everything is fully combined.
  3. Carefully fold in the peaches into the batter.
  4. Transfer the batter into a 9x13-inch baking pan that has been lightly greased. Place it in the oven. Bake for approximately 28 minutes or until a toothpick inserted into the center of the cake comes out clean or, with just a few moist crumbs.
  5. While the cake is baking, prepare your frosting. In a saucepan combine butter, heavy cream and brown sugar. Bring it to a boil while stirring constantly. Remove from heat. Stir in vanilla extract. Gradually whisk in confectioner's sugar that has been sifted until you achieve a smooth consistency.
  6. Once your cake is baked and still warm pour your frosting over it evenly.
  7. Let your cake cool down before slicing it so that the frosting can set properly. Enjoy!

Notes

To make this delicious Brown Sugar Peach Cake gluten-free while still preserving its flavors and textures here's a twist you can try:
Substitute the regular yellow cake mix with your preferred gluten-free cake mix. Nowadays gluten-free mixes have made strides in terms of taste and texture providing an alternative that allows everyone to savor this scrumptious dessert. When choosing your mix aim for one that guarantees a moist and fluffy result as it will closely resemble the recipe's texture.
No changes are needed for the peaches as they are inherently gluten-free. They will continue to deliver their burst of summery goodness in every slice.
Regarding the frosting all the ingredients used are naturally gluten-free. The butter, cream, brown sugar, vanilla extract and confectioner's sugar are options. However it's always prudent to check labels, for any hidden sources of gluten or contamination warnings—especially when it comes to confectioner's sugar.
