Ingredients

  • 4 boneless skinless chicken breasts - pound to even thickness
  • Salt/pepper - to taste
  • 8 oz cream cheese - softened
  • 1/4 c mayonnaise
  • 1 c shredded cheddar cheese - divided
  • 1 tsp garlic powder
  • 1 c broccoli buds the green flowery ends, no stems

Instructions
 

  1. Preheat the oven to 425ºF. And grease a large roasting dish.
  2. Place the chicken breasts in the dish. Season with salt and pepper.
  3. In a bowl, mix the softened cream cheese, mayonnaise, 1/2 cup of shredded cheddar, garlic powder, salt, pepper, and broccoli buds.
  4. Spread the cream cheese mixture over the chicken breasts, then top with the remaining shredded cheddar.
  5. Bake for 20 minutes. Check the internal temperature; it should be 165ºF. If not, cover with foil. And bake for an additional 15-20 minutes.
  6. Let rest for a few minutes before serving.
