Ingredients

Dressing:

  • 3/4 c non-fat plain Greek yogurt
  • 1/2 c light mayonnaise
  • 1/4 c pure honey
  • 2 tablespoons red wine vinegar
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt adjust to taste

Salad Components:

  • 4 c finely diced broccoli florets
  • 4 c finely diced cauliflower florets
  • 8 ounces bacon about 8 slices, diced, cooked crisp, and drained
  • 1 1/4 c small cubes of Colby Jack cheese about 6 ounces
  • 1/2 c finely chopped red onion rinsed and drained for best flavor

Instructions
 

  1. Dressing: In a medium mixing bowl. Whisk all the dressing ingredients together. Until fully combined. And smooth. Once mixed. Cover. And refrigerate the dressing. To keep it fresh. Until you're ready. To use it.
  2. Salad Assembly: In a large salad bowl. Toss together the diced broccoli. And cauliflower florets. Add the cooked, crispy bacon. Distributing it evenly. Throughout the salad. You can reserve. A bit of bacon. For garnish if desired. Next, mix in the cubed Colby Jack cheese. And chopped red onion. Reserving some onion for garnish. If you'd like. A decorative touch.
  3. To serve: When ready to serve. Drizzle the prepared dressing. Over the salad. And toss gently. To coat all the ingredients. For a finished look. Sprinkle the reserved bacon. And red onion on top. This salad is best enjoyed. Shortly after preparation. To maintain its crisp, fresh taste.
