  • 2 5.3 oz containers blueberry Greek yogurt
  • 1 c fresh or frozen blueberries

  • 2 c powdered sugar
  • 1/3 c milk
  • 2 tsp blueberry jam or mashed fresh blueberries

  1. Preheat & Prep: Turn your oven to 350°F (175°C). Spray a 24-cup mini muffin pan with non-stick spray.
  2. Mix Dry Ingredients: In a large bowl, whisk 1–1/2 c flour, ½ c sugar, 2 tsp baking powder, and ½ tsp salt together.
  3. Combine Wet Ingredients: In a smaller bowl, mix together 6 tbsp melted butter, 1 egg, 1 tsp vanilla, and two 5.3 oz containers of blueberry Greek yogurt.
  4. Combine Wet & Dry: Add the wet mixture to the dry ingredients, stirring until just combined. Fold in 1 c blueberries gently.
  5. Bake: Distribute the batter evenly among the muffin cups. Bake for about 15 minutes, until they start to brown on top.
  6. Make Glaze: While the fritters bake, whisk together 2 c powdered sugar, 1/3 c milk, and 2 tsp blueberry jam in a bowl until smooth.
  7. Broil Fritters: After baking, move the fritters to a baking sheet lined with parchment. Dip each fritter top into the glaze, then broil in the oven for 3-4 minutes until they start to caramelize. Watch closely to prevent burning.
