Notes

To enjoy these delicious Blueberry Biscuits in a gluten-free version simply replace the all-purpose flour with your preferred gluten-free flour blend. Look for a blend specifically designed for a 1:1 substitution so that your biscuits maintain their desired texture. Additionally include 1/4 teaspoon of xanthan gum, in the mixture unless your chosen flour blend already contains it. Xanthan gum helps replicate the binding quality of gluten resulting in biscuits that have the structure and chewiness. It's important to ensure that all the ingredients you use for this recipe are explicitly labeled as gluten-free the baking powder and vanilla extract to guarantee that your finished biscuits are completely free, from gluten.
