Ingredients

  • 1 prebaked thin pizza crust 8–10 ounces, such as Boboli 100% Whole Wheat Thin Pizza Crust
  • 1/3 cup barbecue sauce e.g., Sweet Baby Ray’s
  • 1 1/2 cups shredded rotisserie chicken breast skinless, boneless
  • 1/2 cup red onion thinly sliced vertically
  • 1/2 cup yellow bell pepper coarsely chopped
  • 1 teaspoon crushed red pepper flakes
  • 1/2 cup 2 ounces crumbled blue cheese
  • 1/4 cup reduced-fat shredded mozzarella cheese
  • 2 plum tomatoes approximately 1/4 pound, thinly sliced

Instructions
 

Preheat the Oven:

  1. Preheat the oven to 500°F (260°C) to ensure a crisp crust and properly melted cheese.

Prepare the Pizza Base:

  1. Place the prebaked thin pizza crust onto a baking sheet or pizza pan. Evenly spread the barbecue sauce over the surface of the crust, leaving a 1/2-inch border around the edges.

Add the Toppings:

  1. Distribute the shredded rotisserie chicken evenly over the sauce layer. Arrange the red onion slices and chopped yellow bell pepper across the top. Sprinkle the crushed red pepper flakes for a subtle heat.

Incorporate the Cheeses and Tomatoes:

  1. Scatter the crumbled blue cheese evenly over the pizza, followed by the shredded mozzarella. Finally, place the thinly sliced plum tomatoes across the surface for added freshness and flavor.

Bake the Pizza:

  1. Transfer the assembled pizza to the preheated oven. Bake for approximately 10 minutes, or until the cheeses are fully melted and the crust is crisp and golden at the edges.

Serve:

  1. Remove the pizza from the oven and allow it to cool briefly. Slice into 12 wedges and serve immediately.

Notes

To prepare a gluten-free version of this BBQ Chicken and Blue Cheese Pizza, substitute the regular prebaked thin pizza crust with a certified gluten-free pizza crust of similar size and thickness. Verify that all other ingredients, particularly the barbecue sauce and cheeses, are certified gluten-free to avoid cross-contamination. Baking times remain the same; however, monitor the crust closely to prevent overbrowning, as some gluten-free crusts may crisp faster.
