Ingredients

  • ΒΌ cup butter softened
  • 1 cup freshly grated Parmigiano-Reggiano cheese
  • 8 slices cooked bacon
  • 4 slices Cheddar cheese
  • 8 slices sourdough bread

Instructions

Prepare the Parmesan butter spread.

  1. In a small mixing bowl, combine the softened butter and grated Parmesan cheese. Stir until the mixture is smooth and evenly blended.

Assemble the sandwiches.

  1. Arrange four slices of sourdough bread on a flat surface. On each slice, place two slices of cooked bacon and one slice of Cheddar cheese. Top each with the remaining bread slices to form sandwiches.

Butter the exterior of the sandwiches.

  1. Spread a portion of the prepared Parmesan butter mixture evenly onto the top side of each sandwich.

Cook the sandwiches.

  1. Heat a large skillet over medium heat. Place the sandwiches buttered side down in the skillet. Spread the remaining Parmesan butter on the exposed top slices while the sandwiches cook. Cook for approximately 3 minutes per side, or until golden brown and crisp on both sides and the cheese has melted.

Slice and serve.

  1. Remove the sandwiches from the skillet and transfer to a cutting board. Slice each sandwich in half diagonally and serve immediately while hot.
