Ingredients

For Cooking the Beef:

  • ½ cup sliced onion
  • 3 garlic cloves chopped
  • 1- inch piece fresh ginger chopped
  • ½ teaspoon ground turmeric
  • 1 tablespoon ground coriander
  • 1 tablespoon garam masala
  • 1 teaspoon red chili powder
  • 1 kilogram 2.2 lbs gravy or chuck steak, cut into 2.5 cm cubes
  • ¼ cup coconut slices optional
  • Salt to taste

For Tempering the Spices:

  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 2 dried bay leaves
  • 1 cinnamon stick
  • 1 cup chopped onion
  • ¼ teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 2 teaspoons garam masala
  • ½ teaspoon red chili powder
  • Water as needed
  • Salt to taste
  • ¼ cup chopped coriander cilantro leaves

Cooking the Beef

  1. Stovetop Method: Combine diced beef, sliced onions, chopped garlic, ginger, ground turmeric, coriander, garam masala, and red chili powder in a large frying pan. Season with salt, and add enough water to cover the beef. Simmer gently for approximately 1 hour, stirring occasionally, until the beef is tender.
  2. Pressure Cooker Method: Place the diced beef, onions, garlic, ginger, turmeric, coriander, garam masala, red chili powder, and coconut slices (if using) in a pressure cooker. Add salt and stir to combine. Cook for 5–6 whistles. Allow the pressure to release naturally before opening the lid.

Tempering the Spices

  1. Heat the oil in a large frying pan over medium-high heat. Add mustard seeds and allow them to splutter.
  2. Add bay leaves and a cinnamon stick. Sauté for a few seconds to infuse the oil.
  3. Stir in the chopped onions and sauté for 3–4 minutes, or until golden brown.
  4. Add ground turmeric, coriander, garam masala, and red chili powder. Stir continuously for 1 minute to toast the spices and release their aroma.
  5. Add a small amount of water to create a thick sauce. Bring the mixture to a boil, then reduce the heat and simmer for 2–3 minutes.

Assembling the Curry

  1. Add the cooked beef to the tempered spice mixture. Stir thoroughly to combine.
  2. Sprinkle in the chopped coriander leaves and simmer for an additional 5–6 minutes to allow the flavors to meld.

Serving

  1. Transfer the curry to a serving dish and garnish with additional coriander leaves if desired. Serve hot with steamed rice or naan bread.

Notes

This recipe is naturally gluten-free. Ensure that all ingredients, such as garam masala and ground spices, are certified gluten-free to avoid cross-contamination. If using pre-packaged coconut slices or broth, verify that they are gluten-free as well.
