Ingredients

  • 1.5 pounds of chicken thighs
  • 1/2 c of tomato sauce
  • 1 chopped red bell pepper
  • 1/2 c of peanut butter
  • 1/4 c of olive oil
  • 1/2 chopped onion
  • 1 tsp of cayenne pepper
  • 1 tsp of bouillon granules or powder
  • 2 c of chicken broth
  • 1 tsp of black pepper
  • 1 tsp of salt or to taste

Instructions
 

  1. Rinse. And pat the chicken dry. In a small bowl. Combine salt. And pepper. Then season both sides. Of each chicken piece. With the mixture.
  2. Heat some olive oil. In a large skillet. Over medium-high heat. Brown the chicken on both sides. Until golden. Once browned. Remove the chicken. From the skillet. And set aside.
  3. In a large soup pot. Heat 1/4 cup of olive oil. Add the chopped onions. And red bell pepper. Sautéing them for a few minutes. Over medium heat.
  4. Stir in the tomato sauce. And spices (excluding the salt). Letting it simmer. For a few minutes. Before pouring in the chicken broth.
  5. Return the browned chicken pieces. To the pot, stir. And let everything simmer. For about 10 minutes.
  6. Adjust the salt to taste. If needed. Lastly, stir in the peanut butter. Ensuring it's well blended. Into the stew.
  7. Let it cook. Until the stew thickens. And enjoy your African Chicken Peanut Stew!
