Ingredients

For the Cookies:

  • 1 cup unsalted butter softened
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 2 cups all-purpose flour

For the Topping:

  • 2 tablespoons milk
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar

Instructions

Prepare the Dough:

  1. In a large mixing bowl, cream together the butter and granulated sugar until the mixture is light and fluffy. Add the egg and mix well until fully incorporated. Gradually add the flour, stirring until a soft dough forms.

Chill the Dough:

  1. Cover the dough with plastic wrap and refrigerate for at least two hours to allow it to firm up, making it easier to roll out.

Preheat and Prepare:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Lightly flour a clean work surface and rolling pin to prevent sticking.

Roll Out the Dough:

  1. Roll out the chilled dough to 1/16 inch thickness. Using a 2-inch cookie cutter, cut the dough into circles and carefully transfer them to the prepared baking sheet.

Apply the Topping:

  1. Lightly brush each cookie with milk using a pastry brush. In a small bowl, mix the cinnamon and sugar, then generously sprinkle over the cookies.

Bake the Cookies:

  1. Bake in the preheated oven for 8 to 10 minutes, or until the edges turn a light golden brown. Remove from the oven and allow the cookies to cool completely on a wire rack.

Serve and Enjoy:

  1. Once cooled, the cookies should be crisp and snap easily when broken in half. Serve immediately or store for later.

Notes

To make these Amish Sand Tarts gluten-free, replace the all-purpose flour with a gluten-free 1:1 baking flour blend. Ensure that the blend contains xanthan gum or a similar binder for the best texture. Additionally, confirm that your cinnamon and other ingredients are certified gluten-free.
