Ingredients

  • 2 c. unsweetened flake coconut
  • ½ c. dark chocolate chips mini or regular
  • 3 tbsp. chopped salted almonds
  • ½ c. sweetened condensed coconut milk

Instructions
 

  1. Preheat your oven to 325°F.
  2. Place a sheet of parchment paper on a baking sheet.
  3. Make sure that the sweetened condensed coconut milk is in its liquid form; gently warm it if necessary.
  4. In a mixing bowl combine the coconut flakes, chocolate chips, chopped almonds and liquid sweetened condensed coconut milk.
  5. Use a cookie scoop to portion out the dough onto the prepared baking sheet.
  6. Slightly flatten each cookie using either a spoon or moistened fingers.
  7. Bake for 12 to 14 minutes. Until the coconut starts to turn golden brown.
  8. Allow the cookies to cool on the baking sheet before serving.
  9. For freshness store them in an airtight container at room temperature or, in the refrigerator if preferred.
