This Alice Springs Chicken (copycat) features seasoned chicken breasts topped with smoky bacon, melted cheddar cheese, and green onions for a hearty, satisfying entrée perfect for any night of the week.

Ingredients

  • 3 large boneless skinless chicken breasts
  • Salt and freshly ground black pepper to taste
  • 6 slices thick-cut bacon
  • 2 cups shredded cheddar cheese
  • cup chopped green onions for garnish

Instructions
 

Preheat the oven

  1. Preheat the oven to 350°F (175°C).

Prepare the chicken

  1. Using a sharp knife, slice each chicken breast in half lengthwise to yield six thinner portions. Place the chicken pieces in a baking dish. Season both sides evenly with salt and pepper.

Initial baking

  1. Bake the chicken, uncovered, for approximately 25 minutes or until fully cooked through and no longer pink in the center.

Cook the bacon

  1. While the chicken is baking, place the bacon slices in a skillet over medium heat. Cook until the fat is rendered and the bacon is just beginning to crisp but is still pliable. Transfer to a paper towel–lined plate and cut each strip in half.

Add bacon and continue baking

  1. Remove the chicken from the oven. Place two half-slices of bacon over each piece of chicken. Return the dish to the oven and bake for an additional 10 minutes.

Top with cheese and finish baking

  1. Remove the dish once again and sprinkle shredded cheddar cheese over each bacon-topped chicken breast. Bake for a final 5 minutes, or until the cheese is fully melted and bubbly.

Garnish and serve

  1. Remove the dish from the oven and allow to cool slightly. Sprinkle with chopped green onions just before serving.
