  • 1 15.25-ounce box Funfetti cake mix
  • 1 stick unsalted butter melted
  • 2 large eggs
  • 1/2 cup rainbow sprinkles for rolling (optional)

Instructions
 

Prepare the Oven and Baking Sheets

  1. Preheat the oven to 350°F (177°C). Line two baking sheets with parchment paper and set aside.

Combine the Dough Ingredients

  1. In a large mixing bowl, add the Funfetti cake mix, melted butter, and eggs. Using a sturdy spatula, stir the mixture until a smooth and evenly blended dough forms. The dough will be thick.

Portion the Cookie Dough

  1. Using a medium cookie scoop or a heaping tablespoon, portion the dough into 1 1/2-tablespoon mounds. Place each mound onto the prepared baking sheets, spacing them at least 2 inches apart.
  2. If desired, roll each portion in rainbow sprinkles before placing it back onto the baking sheet.

Bake the Cookies

  1. Transfer the baking sheets to the oven. Bake for 10 to 14 minutes, or until the cookies are puffed, set, and lightly golden at the edges.

Cool and Store

  1. Allow the cookies to cool on the baking sheets for 2 minutes, then transfer them to a wire rack to cool completely.
  2. Store leftover cookies in an airtight container for up to 3 days.

Notes

To make this recipe gluten-free, substitute the Funfetti cake mix with a certified gluten-free cake mix of the same weight (15–16 ounces). Ensure the cake mix includes xanthan gum or another binder for structure. Choose gluten-free, certified sprinkles if rolling the dough for decoration.
