Ingredients

  • 1 large egg
  • ½ cup shredded mozzarella cheese

Optional Add-Ins:

  • 1 teaspoon coconut flour
  • ¼ teaspoon baking powder

Instructions
 

  1. Spray the waffle maker generously with non-stick cooking spray and preheat it according to the manufacturer’s instructions.
  2. In a small mixing bowl, combine the egg and shredded mozzarella cheese. Whisk the ingredients together until fully incorporated. If desired, mix in optional add-ins, such as coconut flour or baking powder, to adjust the texture.

Cook the Waffles

  1. Pour half of the prepared batter into the preheated waffle maker, spreading it evenly across the surface. Close the lid and cook for 3–5 minutes, or until the waffle is golden brown and crisp. Avoid opening the waffle maker prematurely to ensure even cooking.
  2. Remove the cooked waffle carefully and set it aside. Repeat the process with the remaining batter to create a second waffle.
  3. Serve the waffles warm. They can be topped with your choice of keto-friendly options, such as sugar-free syrup, whipped cream, or avocado, depending on whether you prefer a sweet or savory dish.

Notes

This recipe is naturally gluten-free, as it does not contain any flour. If using optional add-ins like coconut or almond flour, ensure they are labeled gluten-free to avoid cross-contamination.
