Ingredients

1 1/4 c warm water

2 1/2 tsp active dry yeast

1 tbsp sugar

1/2 tsp salt

34 c flour

2 medium jalapeños, seeded and finely minced

2 c shredded cheddar cheese

4 c very hot water

1/4 c baking soda

1 egg + 2 tbsp water

Coarse salt for sprinkling

2 tbsp melted butter


Instructions

Preheat and Prepare: Heat the oven to 450°F and line a baking sheet with parchment paper.

Activate Yeast: Mix warm water, yeast, and sugar in a stand mixer. Let it sit until frothy (about 5-10 minutes). Stir in the salt.

Make Dough: Add 3 cups of flour, the jalapeños, and cheese to the mixer. Mix well. Gradually add more flour if needed until the dough is slightly tacky but not sticky.

Prepare Bath: In a large bowl, dissolve baking soda in 4 cups of very hot water. Set aside. In another bowl, whisk the egg and 2 tbsp water for the egg wash.

Shape Pretzels: Divide the dough into four sections. Roll each section into a log and cut into three pieces. Roll each piece into a long rope, twist, and form into a pretzel shape. Secure the ends.

Baking Soda Dip: Submerge each pretzel in the baking soda bath for 30 seconds, then place on the prepared baking sheet.

Apply Egg Wash: Brush each pretzel with the egg wash and sprinkle with coarse salt.
