Β½ c shredded coconut (extra for topping)

Lime Frosting:

Β½ c butter, at room temperature

Β½ tsp lime extract

1 Β½ c powdered sugar

1 tbsp heavy cream or milk

2 tbsp lime juice

food coloring

2 tbsp white chocolate, melted (for drizzling)


Instructions

Preheat oven to 350Β°F. Line an 8×8 baking pan with parchment paper.

Cream together softened butter and brown sugar until smooth. Add egg, vanilla, and coconut extract, mixing well.

Fold in flour, baking powder, salt, shredded coconut, and white chocolate chips until just combined.

Spread batter in the prepared pan. And bake for 15-16 minutes. Let cool completely.

For frosting, whip softened butter, powdered sugar, lime juice, milk, and lime extract until creamy. Add food coloring. To achieve the desired shade.
