8 oz ground hot Italian sausage

1/2 orange bell pepper, diced

1/2 red bell pepper, diced

2 c baby spinach

1 c cheddar cheese

1/2 c milk

12 large eggs

Thinly sliced chives, to garnish

Salt and pepper to taste


Instructions

Preheat Oven and Skillet: Start by preheating your oven to 350Β°F. Heat 2 tbsp of olive oil in an ovenproof skillet. Over medium-high heat.

Cook Sausage: Add the 8 oz of ground hot Italian sausage to the skillet. Breaking it into small pieces. Cook for 6 to 8 minutes. Until fully cooked.

SautΓ© Vegetables: Add 1/2 diced orange bell pepper and 1/2 diced red bell pepper. Cook for about 4 minutes. Until they soften. Then, add 2 c of baby spinach. And cook for another 2-3 minutes until wilted. Season with salt and pepper.

Prepare Egg Mixture: In a large bowl, beat 12 large eggs with 1/2 c of milk and 3/4 c of cheddar cheese. Whisk until smooth.

Combine and Cook: Pour the egg mixture over the sausage and vegetables in the skillet. Cook for about 3 minutes on medium heat. Until the edges begin to set.

Bake Frittata: Sprinkle the remaining 1/4 c of cheddar cheese on top. Transfer the skillet to the oven. And bake for 20 minutes. Or until the center is set.

Garnish and Serve: Remove from oven. Let it cool slightly. Garnish with thinly sliced chives. And serve immediately. Enjoy!
