Β½ c unsalted butter

7 oz marshmallow cream

5 c powdered sugar

1 tsp pure vanilla extract

For the coating:

2 bags caramel bits (11 oz each)

2 tbsp unsalted butter

2 c chopped peanuts


Instructions

Prepare the filling:

Start by melting Β½ cup of unsalted butter and 7 ounces of marshmallow cream together. In the microwave for about 30-60 seconds. Until the butter is fully melted. And the mixture is smooth.

In a large mixing bowl, combine the melted butter. And marshmallow mixture. With 5 cups of powdered sugar. And 1 teaspoon of pure vanilla extract. Use a mixer or your hands to blend. Until it forms a dough-like consistency.

Place this dough onto a piece of parchment paper or a silpat. And knead it into a large ball. Divide this ball into six equal parts. Roll each part into a log about 7-8 inches long and 1 inch thick.

Wrap each log in parchment paper. And place them in the freezer for about two hours. Or until they are firm.

Make the coating:

While the logs are chilling. Prepare the caramel coating. Melt 22 ounces (2 bags) of caramel bits and 2 tablespoons of unsalted butter together in an 11×7-inch baking dish. In the microwave for about 1 Β½ minutes. Until the mixture is smooth. It’s normal if the butter separates from the caramel a bit.

Allow the caramel to cool slightly. Then use your hands to combine the butter back into the caramel. Press this caramel mixture evenly into the bottom of the baking dish. And score it into six equal portions.

Assemble:

Take one frozen log. And unwrap it. Using your hands, take one portion of the caramel. And spread it over the log. Ensuring it’s completely covered. It may feel like you’re working with playdough. But that’s okay!

Once the log is coated with caramel. Roll it in 2 cups of chopped peanuts. Pressing them into the caramel so they stick. Wrap the log back in parchment paper. And place it in the refrigerator.
