For the crust:

1/2 c almond flour

2 tbsp butter, melted

1 tbsp powdered sugar

1/4 tsp cinnamon

For the batter:

6 oz cream cheese, softened

1/4 c creamy peanut butter

1/2 c powdered sugar

1 large egg

1/2 tsp vanilla extract

1/4 tsp salt

6 tsp raspberry jelly


Instructions

Preheat your oven to 300Β°F (150Β°C). Lightly grease a 6-cup muffin tin to prepare it for the crust.

Prepare the Crust: Combine 1/2 cup almond flour, 2 tablespoons melted butter, 1 tablespoon powdered sugar, and 1/4 teaspoon cinnamon in a bowl. Until a dough forms. Divide this mixture equally into the muffin cups. Pressing down. To create a crust at the bottom of each cup. Bake for 10 to 15 minutes. Until golden brown. Then allow it to cool for 10 minutes.

Make the Batter: Use a mixer to blend 6 ounces of softened cream cheese until it’s smooth. Add in 1/4 cup of peanut butter, 1/2 cup powdered sugar, 1 egg, 1/2 teaspoon vanilla extract, and a pinch of salt to the cream cheese. Mix thoroughly until all ingredients are well incorporated.

Spoon the batter over the cooled crusts evenly in each cup. Top each with a dollop of raspberry jelly.

Place the muffin tin back into the oven. Bake for 18 to 20 minutes. Or until the cheesecakes are fully set. Once done baking remove from the oven. Allow them to cool completely for about half an hour before serving.
