1 c dark brown sugar, packed

1 c unsalted butter (2 sticks), at room temperature

3 large eggs, at room temperature (extra-large eggs can be used too)

1 3/4 c cake flour (all-purpose flour can be substituted)

1 1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon allspice

1/2 teaspoon freshly grated nutmeg

1/4 teaspoon ground cloves

1/2 c cultured buttermilk

2 c diced peaches, skin on (about 3 smallish peaches)

1 teaspoon coarse sparkling sugar


Instructions

Preheat and Prepare: Preheat your oven to 350°F (175°C). And lightly butter a 9×5 loaf pan. Line it with parchment paper, leaving some overhang. To easily lift out the bread later.

Cream the Butter and Sugar: In a stand mixer, beat together 1 c of dark brown sugar and 1 c of room-temperature unsalted butter. Until the mixture becomes light and fluffy. This should take about 5 minutes. And it’s important to incorporate air into the batter.

Add the Eggs: Add 3 large eggs to the butter and sugar mixture, one at a time. Make sure each egg is fully mixed in before adding the next. Continue to beat the mixture. For another 2-3 minutes until smooth.

Mix Dry Ingredients: In a separate bowl, whisk together 1 3/4 c of cake flour, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of salt, and the spices (1 teaspoon cinnamon, 1/2 teaspoon allspice, 1/2 teaspoon nutmeg, and 1/4 teaspoon ground cloves).

Combine Wet and Dry: Gradually add the dry ingredients to the butter mixture. Alternating with 1/2 c of cultured buttermilk. Start and end with the dry ingredients, mixing gently. Fold in 2 c of diced peaches carefully. Ensuring they’re evenly distributed.

Pour and Bake: Pour the batter into your prepared loaf pan. And spread it evenly. Sprinkle 1 teaspoon of coarse sparkling sugar on top for a crunchy, sweet finish. Bake in the preheated oven for 50-55 minutes. Or until a toothpick inserted into the center comes out mostly clean with just a few moist crumbs.

Cool and Serve: Allow the bread to cool in the pan for about 10 minutes. Before using the parchment paper to lift it out. Transfer the loaf to a wire rack to cool completely. Then slice and enjoy either warm or at room temperature.
