Description

These Mini Chicken Sheet Pan Tostadas are the ultimate quick. And delicious snack. Or appetizer. Made with crispy corn tortillas, creamy refried beans, and tender shredded rotisserie chicken. Each bite is packed with flavor. The melted cheese on top. Adds a gooey goodness. While the fresh garnishes of sour cream, red onion, cherry tomatoes, and cilantro. Provide a burst of color. And freshness. Perfect for busy weeknights. Or casual gatherings. These tostadas are easy to make. And even easier to enjoy. My family loves them. And I’m sure yours will too!


Ingredients

12 street taco size corn tortillas, approximately 4-inch

3 tbsp vegetable or canola oil, or as needed

16 oz can traditional refried beans, I used just shy of 1 can

2 c shredded rotisserie chicken breast meat

2 c shredded cheese, sharp cheddar, Monterey Jack

FOR GARNISH:

β…“ c sour cream, or as needed

ΒΌ c finely diced red onion, or as needed

ΒΌ c chopped or torn cilantro leaves, or as needed

6 cherry or grape tomatoes, chopped into small pieces

hot sauce, I used Cholula


Instructions

Preheat oven to 450Β°F. Line a large baking sheet with foil.

Brush tortillas with oil on both sides and place them on the baking sheet. Bake for 9-10 minutes until firm.

Let the tortillas rest for 5 minutes, then flip them over.

Spread each tortilla with refried beans, then top with shredded chicken and cheese.

Bake for another 5-6 minutes until the cheese melts.

Top each tostada with sour cream, diced red onion, cherry tomato pieces, and cilantro. Enjoy with hot sauce.

Notes

To make these Mini Chicken Sheet Pan Tostadas gluten-free. Simply use certified gluten-free corn tortillas. Many store-bought corn tortillas are naturally gluten-free. But it’s always best to check the label to be sure. Additionally, ensure that your refried beans. And any other ingredients. Such as the hot sauce. Are gluten-free. If you’re using a pre-made rotisserie chicken. Verify that it’s gluten-free as well. As some store-bought rotisserie chickens. May contain gluten in their seasoning or preparation. By making these small adjustments. You can enjoy these delicious tostadas. Without any gluten concerns.
