Meatloaf Cupcakes:

1 pound beef mince (ground beef)

1 onion, grated (brown, white, or yellow)

2 small carrots, grated

2 eggs

1/4 c grated parmesan cheese

1/4 c tomato ketchup (or tomato sauce)

1 c panko (or breadcrumbs)

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

Pepper to taste

Mashed Potato:

2 large or 3 medium potatoes

1 tablespoon butter (optional)

1/21 c milk

Garnish:

Tomato ketchup or sauce

Parsley, finely chopped (optional)


Instructions

Meatloaf Cupcakes:

Preheat oven to 180Β°C/350Β°F.

SprayΒ 8Β holes of a muffin tin with cooking spray.

Grate onion and carrot into a large bowl.

Add beef, eggs, parmesan cheese, ketchup, panko, garlic powder, oregano, thyme, salt, and pepper. Mix well.

Scoop about 1/2 cup of mixture into each muffin cup, shaping the top into a slight dome.

Bake for 20-25 minutes until browned on top. Remove from oven.

Mashed Potato:

Peel and dice potatoes. Boil or steam until soft.

Drain potatoes, then mash with butter and milk until smooth.

Assemble:

Spread a small dollop of ketchup on each meatloaf cupcake.

Top with mashed potatoes, either by piping or spooning it on.

Garnish with chopped parsley if desired. Serve and enjoy!
